I primarily use select > color range and the modify selection dialogue to get the basic shape.
Then I quick mask (q) as needed to clean up the edges and finish off by selecting the content (ctrl + click on the layer in the layers palette) and apply a very small feather and a 1 or 2 pixel smooth.
For something like that picture it takes about 5 – 8 minutes to get a decent cutout.

This is the first time using it for a gif. Sure wish I knew about it when doing the Griffey on a Rascal.
Had the same problem.
For each individual frame, you have to “Merge Down” your photoshop. Try it, see how it works, and then you will get the feel for it.
This is definitely my favorite one.
