OTFPOTD 2/16/09 - I need a good chili recipe edition

So as I mentioned last week, me and the mrs. are on a cleansing diet for the next 10 days - small portions, no processed foods, no dairy, no caffeine, no bread.  Just to prove I'm not completely insane, though, meat is allowed - even red meat, as long as it's lean.  Which means chili is still on the list of things we can eat, as long as there's no cheese in/on it.

I have a couple chili recipes that I like, but I'm getting tired of them, and I need a new one.  I'm up for just about anything, chili-wise; I like all kinds of meat, all kinds of beans, and the spicier the better.  So if you have a good chili recipe, I'd love to see it.

Oh yeah, and spring training's in full swing, which to me serves as the canary in the long interminable coalmine that is winter, to completely ruin a good analogy.  Baseball inches ever closer, and things are looking up.

But I am desperately searching for a chicken basil chili recipe such as they serve in the Fred Hutch cafeteria. It is one of the tastiest soups I’ve ever eaten.

I can't be specific, but...

I start mine with a jar of hot salsa, a couple of cans of whole peeled tomatoes, spices(cumin, garlic powder, onion powder, chili sauce and a bit of cayenne) and some lightly cooked hot Italian sausage and whatever cheap beef steak I can find. It’s really a mish mash and done entirely by smell. Either I like it or I don’t. I usually add some onions and black olives at some point but that’s just a personal preference. This is done in a crock pot I might add, but I doubt it would be any different in a regular pot.

Just make sure you slice the sausage while slightly frozen, much easier that way. Otherwise, follow your nose!

It's hard to say without being a particle physicist

I work with a bunch of people who are physics phds

and synchrotron scientists. They are markedly less optimistic. I think the major stumbling block I hear is the following. They aren’t really 100% in the field though but I’m guessing they are paying attention to it pretty closely.

You might be able to get fusion to occur but the energy you put in to get the reaction to start, the energy you get out while the reaction occurs, and the complexity that it requires is just not going to add up to be economically feasible for a long time. They have been able to get fusion to occur and while it is hard, nobody really thought this would be impossible. The hard part is to make the process energy positive (make more energy than it takes).

I’ve also heard that the process might make nearly as much nuclear waste as fission because everything associated with the reactor gets contaminated with all the nuclei junk that is make in the process. I don’t know about this last point but it seems like it could be a reasonable concern.

I really think fusion some day will be the answer. Its just gonna be freaking hard to get it to work. We probably need some major breakthrough in technology to get it to become widespread. I’m guessing it might be developed into a viable technology in our lifetime but I think I’ll probably be pretty old by the time it starts to become useful.

You're telling me nothing I'm not familiar with

They’re operating below an input/output of 1.0, and they have been for the past couple of decades. Now they’re pushing 1.0 on small generators, and with larger ones it should be exceeded without a problem. You need an input/output of much higher than that (20ish, I think) to be viable commercially, and that won’t happen for a long time.

The article suggests 30 years until the technology reaches maturity. What exactly was your problem with that time frame?

I was just thinking longer

Maybe at least twice so around 60 yrs. I just brought up this because the article didn’t really discuss any possible hurdles that need to be overcome. The science to make fusion commonplace is not in place currently and there needs to be a lot more work done. They just didn’t really discuss this at all.

all I do is what my mom did— throw stuff in a pot. Lately it has been a mix of black & kidney beans, ground round or turkey, tomatoes and chili powder. maybe some cumin.

I need a template to start off from – I’m fairly good at improvising/tweaking if I have that, but I’ve never been able to throw six things into a pot and make it taste good.

And I cannot find a chicken chili with basil recipe that fits this description. For some reason, all the recipes for chicken chili use white beans, but this definitely has red and/or black.

brown a lb of meat in a pot, add 1 can kidney beans, one can black beans, two cans of diced tomatoes, season to taste, simmer for a good long time?

chicken chili with basil? ummmm. is it shredded chicken?

I didn't use to be

It was the start of the soup-making that made me more willing to give it a try. I have several soup cookbooks, but find that I tend to just do the veggie bin clear out more often than not. It also helps if you usually eat lunch with a pair of throw-it-in cooks.

Soup is generally super forgiving

Unless the food is flat-out spoiled, it’ll taste fine. Maybe a good way to start is take a recipe and just change one or two things (switch out a spice, or add some potatoes, or whatever).

You can find dried poblano/anaheim peppers at most stores

And seriously, they make basically any Mexican-type food way more enjoyable. They’re easy to use, last forever, and have a lot of uses.

Beer question

Or more accurately, beer festival question: I’m thinking about heading down to Portland to visit some friends in April, and I see that they’re having a pair of events that I’d be interested in: the Spring Beer and Wine fest (April 10-11), which has the advantage of actually being in Portland and the Oregon Garden Brewfest (April 24-25), which is in Silverton. Anyone know anything about either event?

I went to the Spring Beer And Wine fest a couple years ago and it was annoying

but it was mostly annoying because there were a billion people in the convention center and I hate large crowds. large crowds = long lines, which means unless you get there early you’ll wait longer than you’ll drink. If there are brewers there that you’ve never had before and want to check out, it’s probably worth it, but if there’s nothing there that appeals to you you’re better off going to Amnesia, the Lompoc or the Rogue while you’re in town.

I’ve never been to the Oregon Garden brewfest, because it’s in Silverton. Which is a long way to drive for beer.

All three brewpubs I mentioned have outdoor seating areas

word of warning, though: since the smoking ban a bunch of places have turned their outdoor areas into their smoking areas. I don’t know if these three have, though.

Someone I know has done pretty much the same thing. It’s a little less complex because he has less to work with, but it’s still pretty good.

I don't think I have the recipe in my email, but the general gist was...

A black bean chili recipe along the lines of this

Substitute for ground meat with pieces of grilled chicken breast, and then add some fresh mole into the cooking chili about halfway into the cooking.

4C water to boil
Add 2LB meat, wait until browned
Add:
5 cloves garlic
1LB tomatoes
2T vinegar of choice (cider is good)
1T worcestershire (plus an extra dash)
peppercorns
basil
allspice
cloves
2t salt
2t cinnamon
1-2t cumin
1-2t pepper/chili flakes
 1/2 oz chocolate

First thoughts of 'East Bound and Down' anyone?

The new HBO show about the failed MLB reliever (whose career bottoms out in Seattle) debuted last night.
It was…. well, it’s early days.

On the plus side, Flight of the Conchords was awesome. Best show of the new season, and it wasn’t close.

Mine just decided to not how anything but the "this channel will be with you shortly" message.

As I could get the basics straight out of the wall into the VCR, I dawdled on getting it replaced. Turned out to be a combination of the box, and the signal coming in too strongly from the wall.

I caught East Bound and down but missed the latter.

It had a few funny moments but it got tiring real fast. Kenny Powers just isn’t a character funny enough to keep the laughs coming; it was getting old toward the end of the episode.

I’ll watch another episode or two to give it more chances because seriously, when do we ever get a sitcom remotely related to baseball?

Well, there was the youtube series "Back on Topps", which was actually quite funny.

It’s a series of 6.5 minute episodes starring the Sklar brothers. I’d never cared much for their body of work until “Back on Topps”, but it’s very good.

The show maybe maybe showed a little potential, but it doesn’t look promising.

FOC was by far the most enjoyable last night. The pelvic thrusting with disco-balls on their…well…balls was priceless.

I expected to be disappointed — as I was with The Foot-Fist Way — but I really liked the first episode.

And yes, the FOTC episode was great compared with the previous ones this season.

Chili con carne

12 Servings

6 tbsp vegetable or olive oil
3 cloves garlic, minced
2 large chopped sweet onions
3 lb cubed beef
2 cans kidney beans, undrained
1 can black beans, undrained
2 26 oz cans diced tomatoes
poblano pepper, diced
anaheim pepper, diced
2 spoonfuls Molasses
a few good splashes of hot sauce
(cumin, chili powder to taste)

Brown the meat, then throw it all in a crock pot on low heat for 2 or 3 hours. This freezes really well also.

I am just baffled by the self-proclaimed "hardcore baseball fans"

who are proudly proclaiming that they haven’t gone to any games the last few years, but if the Mariners singed Griffey they’d be buying tickets like a shot.

it’s wrong to really love a team and be genuinely proud of not seeing them play live, whether or not you think the FO is incompetent.

I think msb was saying it’s ridiculous to say you’re hardcore and proud of not going to games because the FO is stupid or whatever and then be willing to go because to FO made another stupid move by signing Griffey.

P.S. I still love Griffey irrationally.

that and somehow the Mariners FO (which apparently is the same as it has ever been) will prove their usual selves if Griffey chooses to go to Atlanta, that somehow they should MAKE him come back to Seattle.

The minor league team is a good point, we're thinking of getting some tickets.

I figure it’s more family/kid structured (from what I read, all the games and between inning stuff), cheaper, easier to get to, and I’m really excited by the M’s minor league system potentially playing a larger role. So watching these guys develop, maybe getting the kids some autographs, might be a lot of fun.

 I’m open to any ideas that would encourage my kids to enjoy baseball without shoving it down their throats.

Minor league ball is excellent for that

it’s a much more relaxed atmosphere, it’s usually a lot less crowded, and as you say the players are much more open for signing autographs and taking pictures and whatnot.

I’m sure every team does this, but the Beavers are really good at “family-friendly” stuff like Kids Run The Bases – they do that every Sunday home game, I think. They also used to do a promo once a year where they’d let kids and their dads or moms camp out overnight in the outfield after a Saturday night game – they’d bring out a big movie screen and show kids’ movies for a while, and they had all sorts of activities for kids that wanted to stay up later after the movies, too, and they’d do a big breakfast the next morning.

Especially true if the MiLB team in question has a great park.

The Spokane Indians play in a really wonderful stadium (Avista) and have a nice atmosphere to watch games in. You even get the occasional Taylor Teagarden or Engel Beltre sighting.

Personally I respect people that vote with their dollars, might have helped force some of the current change on the team. I don’t know about the Griffey factor though.

I kinda was in a sense

but my protest was more indirect – I didn’t make the trip up last summer but my thinking was more like “I don’t want to pay $5 a gallon to drive to and from Seattle to watch this incarnation of the M’s when I can save the gas money and watch on TV”. Now that gas is back at a more reasonable level, I’ll be making the trip more often, even if the M’s are still crapulent.

he and Puckett had a lively discussion about how Ichiro is worth what he makes, and that it is wrong to blame him for the team’s struggles when he is doing just what he did when they were winning (with oddly enough) a better team around him. There was also a comment from Furness about JJ and glass houses … There was also some comments about how if you were a team leader, you should be lead the team…

I heard Sandmeyer mention this morning that

He thinks that there should be no issue with Griffey putting up 25 HR and 80 RBI while hitting .250 plus. Also mentioning that there is no excuse for him not to be here because Vidro, Sexson, and Wilkerson all did worse for more money, so “it can’t be any worse, and there is no reason we shouldn’t have Griffey here for that reason” (paraphrasing a bit, because I missed part of it from laughing too much)

Unusually, there was about an hour of entertaining basketball conversation with Elise, Fain and Francis Williams.

And yes, it was Fain. So used to hearing Sandy in the morning that I didn’t pay much attention past that. But after hearing Francis Williams mention how great he thinks it would be to have Griffey out there in center field again I began to discredit him a bit. Thankfully (and very surprisingly), though, Elise and Fain immediately said “no, no, no, he’ll DH. He’d be terrible in the field”

they’ve sucked for several months. The offense is so bad, I gave up hope after a game that we WON… =(

If they make the Sweet Sixteen it will be a miracle of providence. There’s not one team in the Top 25 we could play right now who I would be confident that we’d beat, except maybe Washington at home (because for whatever reason, UW plays awful at Pauley)

wow, actually, after looking back at their schedule, it would take a miracle of a collapse to miss the tournament. They have two tough one-point losses, too. Win those two games and you’re 20-3 and people are talking about as a top-four seed somewhere.

"Tough" losses

that they never should’ve lost. They’ve turned a corner, but they still have a terrible, terrible in-game strategist. The loss to UAB was an unintentional comedy classic.
UA had the ball, tie game, 10 seconds to go. Pennell calls a ‘play’ that involved Budinger dribbling aimlessly, then hoisting a contested turnaround from 19 ft that clanged off.
Another player sprinted across the court to foul the UAB player who’d grabbed the rebound JUST in time to foul him before time ran out. Poor kid forgot the score, and thought UA were down one. UAB hits a free throw, game over.
